Raise your hand 🙋‍♀️ if you sometimes skip a delicious plant-based breakfast (GASP!) because you just don’t have a single second in your day to eat, much less prepare a meal! It’s OK, get those hands up…you are safe here. 😉

Seriously tho’, I think most of us at one point and time have sacrificed our health and nutrition because it wasn’t convenient to take time to eat. But, what if I told you there is no sacrifice? You can keep your too-busy-to-make-food schedule and eat a healthy breakfast. Heck, with this recipe you’ll be more like…”have food, will travel”…it’s that convenient.

I know you have probably heard of overnight oats and I felt the same as you…”Cold oatmeal? No thank you!”. But like everything in life, I try to give things a shot at least once and I gotta say, Ima lovin’ the cold oats.

No kidding, they are INSANELY easy to make. Let’s just say as quick as I make a pot of coffee for the next morning (Shhh, yes, I drink coffee!), I can make a jar of “breakfast”. I usually do the two simultaneously before I head to bed.

Set the timer on the coffee pot, put the jars in the fridge and goodnight Gracie!

And, while you’re making one jar, you might as well just go ahead make a couple because they last in the fridge for several days (IMO, I actually think these oats get tastier and more flavorful the more they sit. 🤤), and I am pretty sure you’ll want more the following morning. Or, if you are super nice, share them with your kids or spouse.

As you probably know oatmeal is super healthy and packed with fiber, protein, and iron, all nutrients your body craves, especially when it has work to do all the live long day! So, just take 5 minutes before bed and let your body know IT’S WORTH IT!

Super Simple Overnight Oats

Don't sacrifice a hearty and healthy breakfast just because you are short on time. Overnight oats are the perfect plant-based, go-to meal for even the busiest people. Taking just a couple of minutes to prepare before bedtime, these oats sit in your fridge and do their thing overnight, while you are in dreamland (probs thinking of your breakfast!). Try muesli instead of oats to change it up and I encourage you to play with the fruit flavors. I love bananas but, strawberries, blueberries, apples, and pears would all work well too.
Prep Time 5 minutes
Course Breakfast
Servings 1

Ingredients
  

  • 3/4 cup organic oats - steel cut or old fashioned not the instant kind - I love steel cut Irish oats
  • 1 organic, pitted Medjool date - chopped
  • 1 tsp ground cinnamon add more if you want
  • 1/2 banana
  • 1 cup organic soy milk - unsweetened use whatever nut-milk you fancy

Instructions
 

  • Add all ingredients to a 16 oz. mason jar. Ensure the top is on tight, shake well and put the jar in the fridge for 6-8 hours. Shake before opening. Enjoy!

Notes

Try muesli too! I love Bob's Red Mill Old Country-Style Muesli. It has everything but the kitchen sink...dried fruit, flax seeds, almonds, barley, oats, walnuts, and rye!
