You know when you are craving something sweet or something salty and you just can’t put your finger on what it is you want? Well, I have found the perfect solution to cure those hunger pangs. A treat that is sweet AND salty, bite-sized, packed with flavor, packed with nutrition, super simple to whip up and completely, 100% satisfying!

Perhaps the only thing you won’t like about this recipe is that these delicate delights are totally addicting, and since they have more than 300 calories in just two dates (one serving), you will want to make sure you don’t sit down to a whole plate of them….like pictured!

Peanut butter and dates are, in my humble opinion, like a vegan Reese’s cup. Well, kind of. Maybe it’s because I like anything sweet and salty together. I was not even a date fan until this past year and now I can’t get enough of them.

So, when you get that urge to munch, and your belly is saying…”SWEET or SALTY, I don’t care, just feed me”…go make these, pronto.  Thank me later.

BTW…You can make a whole bunch of these and bring an assortment for dessert to a party or serve them up at a holiday gathering. No fuss, no muss!

Two-Bite Peanut Butter Date Boats

THE most simple treat to make and to eat. Try any type of nut butter combination and any kind of toppings. For this recipe only I used finely chopped walnuts and a raspberry peanut butter from a local vendor. Sometimes I like crunchy peanut butter or smooth almond butter. And, sometimes I like to top with cacao nibs or small banana slices. Seriously, the date boat world is your oyster!

Servings 1

Ingredients
  

  • 2 Organic Medjool Dates
  • 2 tsp nut butter the choices are endless
  • 1 tsp chopped walnuts again with the endless options

Instructions
 

  • If your dates are not pitted, slice one side of the date lengthwise, without slicing all the way through. Carefully remove the pit...it's really super-simple.
    If you have pitted dates, simply slice the date in 1/2 lengthwise, without going all the way through.
  • Spoon about 1 tsp of peanut butter into the date "boat". If more fits and you want more, by all means add more!
  • Roll the peanut butter side of the boat in the chopped walnuts or whatever topping you choose.
  • Enjoy!
