You certainly don't have to be vegan to love these cookies! I bake them quite often for my non-vegan friends and they can't believe they are 100% dairy-free! These cookies are sweet and salty and chewy. And, I promise, they will go quickly, so I highly suggest making two batches....or if you don't want to do that you can always just hide a few for yourself.
1tspsmoked sea salt**one of the special ingredients
1tspground cinnamonthe other special ingredient
1/3 cupcoconut oil
2tspvanilla extract
1 1/4cuporganic brown sugar
1/4cupunsweetened coconut milk the kind in a can
1/4 cupunsweetened applesauce
1cupvegan semi-sweet chocolate chips***I love the mini ones
Instructions
Preheat oven to 375 degrees F and line a large cookie sheet with parchment paper. You might need two cookie sheets depending on how big/small you like your cookies.
Add the first four ingredients to a bowl. and just gently whisk them together.
In a separate bowl, add the next five ingredients through the applesauce. Using a wooden spoon, stir all ingredients together until well combined.
Add the dry ingredients to the wet ingredients. Stir until well combined and the entire mixture is moist. Add the chocolate chips and stir so they are blended throughout. If the dough seems too dry, add a touch more coconut milk or applesauce.
Using a spoon, scoop about 1 heaping tablespoon of dough onto the prepared cookie sheet. Bake for 8-10 minutes. Mine take exactly 9 minutes. Cookies should be a golden brown on the edges and soft in the middle. Remove from cookie sheet and cool on a baking rack until you can't stand it any longer.
Notes
*I have used organic whole wheat flour before and it makes the cookies quite dense, although more nutritious.**Smoked sea salt is worth the investment because it goes a long way. I love Maldon brand. There's something about adding just a hint of salty-smokiness to these cookies that just works. If you don't have smoked sea salt use a coarse salt such as pink Himalayan or kosher.***I love the Enjoy Life brand.
